
The winery is located in O Mollón, in the parish of Viñoás (Nogueira de Ramuín), and is housed in a two-storey building with an underground cellar for storing bottled wine, covering a total area of 680 m².
The grapes are harvested by hand and collected in small containers so that the fruit is not damaged during transport to the winery. Specially designed plastic crates are used for this purpose. The grapes are transported quickly to the winery to prevent premature fermentation and are destemmed to separate the stems from the berries, with no crushing beyond the minimum caused by the destemming process. The resulting pomace ferments for a relatively short period, during which the temperature is controlled to prevent it from exceeding a certain level above which the resulting wine would not have the required qualities, particularly its aromatic qualities. During this initial short period, the must remains in contact with the pomace in order to extract as much as possible of the substances in the grapes that will shape the wine's personality.
At the appropriate time, the must, by then converted into wine, is separated and treated to stabilise its key characteristics.
Production is very limited and focuses on wines that undergo an ageing process, first in stainless steel and then in French Allier oak barrels, seeking the optimum point of maturity and balance in their qualities.

The Pombares Red wine is made from a blend of two grape varieties: 85% Mencía and 15% Garnacha Tintorera.
It is made from destemmed grapes fermented in temperature-controlled stainless-steel tanks.
It has a bright cherry-red colour with a purple rim and is very fruity and aromatic. Velvety, balanced, well-structured and rounded on the palate, with intense tannins.
Ideal with light meats, fish and seafood.
Alcohol content: 12% vol.
Serving temperature: 16°C.
This is the great red grape variety of north-western Spain, particularly in the Ribeira Sacra, Valdeorras and Bierzo designations of origin.
It produces wines of exceptional quality, with an unmistakable bouquet and velvety texture. They are smooth on the palate, creating a pleasant sensation, with balanced acidity and generous alcohol. They are flavoursome and slightly astringent, with an elegant, fruity aftertaste featuring hints of raspberry or blackberry and a long-lasting finish.
The Mencía grape is closely related in character to other varieties such as Tempranillo and Cabernet Franc.
The Pombares White wine is made from a blend of two grape varieties: 85% Godello and 15% Treixadura. These are two high-quality native Galician varieties.
Clean and bright appearance. Lemon-yellow colour with straw tones. Very fruity and complex aroma, with a blend of fruit dominated by peach and apple.
On the palate: fruity, flavourful and full-bodied, with a slightly sweet finish.
Alcohol content: 11.50% vol.
Serving temperature: 8 to 10°C.
Highly aromatic and glyceric, native to Galicia and essential in the Valdeorras and Bierzo designations of origin.
Its typical aromas are fruity, floral and herbaceous, with some hints of aniseed and mint.
In addition to its extraordinary aromatic potential, the Godello grape has a marked lactic character that produces wines with a broad, full mouthfeel.
