The winery is located in O Mollón, in the parish of Viñoás (Nogueira de Ramuín).
It is housed in a two-storey building with an underground cellar for storing bottled wine, covering a total area of 680 m².
The parish of Santa María de Viñoás, where Adega do Mollón is located, lies in Nogueira de Ramuín, a municipality in Ourense traditionally known as the birthplace of knife sharpeners and umbrella makers, and forms part of the beautiful natural area known as Ribeira Sacra.
Pombares Red is made from a blend of two grape varieties: 85% Mencía and 15% Garnacha Tintorera.
Pombares Ribeira Sacra wines are made from destemmed grapes fermented in temperature-controlled stainless-steel tanks.
Production is very limited and focuses on wines that undergo an ageing process, first in stainless steel and then in French Allier oak barrels, seeking the optimum point of maturity and balance in their qualities.
