Our wines

Youth, flavor, aroma, … qualities of our land

Of the three main varieties of wine that are in the D.O. Ribeira Sacra – Mencia (red), Albariño and Godello (white), all varietals – our winery, among others, produces two of them Mencia and Godello.

The wines of the Ribeira Sacra wines are full of youth, taste, aroma and intense color. Mencia variety is the most cultivated and extended. Wines are cherry, bright, with purple reflections and olfactory fruity. Among the highlights Godello white wines, for its intense aroma and its freshness.

Products and Development

Process

The grapes, harvested by hand, are collected in small containers that allow the fruit not to suffer during its transfer to the winery. Plastic boxes specially designed for this purpose are used for this. The transport to the winery is carried out quickly to avoid possible early fermentations and it is destemmed to separate the stalks from the grape berries, with no more crushing than the minimum required by the de-stemming action. The pomaces thus obtained ferment for a relatively short time, during which the temperature is controlled to prevent it from exceeding a certain level above which the wine obtained would not have the required qualities, especially aromatic ones. In this initial (short) period, the must is in contact with the pomace to extract as much as possible the substances from the grape that will make up the personality of the wine.

At the right moment, the must (already converted into wine) is separated and its treatment is carried out to achieve the stabilization of its vital signs.

Production

The production is very limited and is aimed at wines that are subjected to an aging process, first in stainless steel and then in French “Allier” oak barrels, seeking the optimum point of maturation and balance of their qualities.

Types of wine

We make the following types of wine, obtained from grapes of the varieties:

  • Red: Mencía (85-90%), Garnacha (13-10%) and Tempranillo (2%).
  • White: Godello (85-90%), Treixadura (5-10%) and Albariño (5-10%).
    A part of the production is aged in French “Allier” oak barrels to obtain wines of the highest quality.

 

  • VTM Barrica (red wine Mencía aged in barrel): aging for 6 to 9 months.
  • VB Barrica (white wine aged in barrel): aging for 3 to 5 months.

Pombares Red Wine

Pombares red wine is obtained from the mixture of two types of grape, Mencia 85% and 15% Garnacha Tintorera.

It is made with stemmed grapes by fermentation in stainless steel tanks with temperature control.

It has a bright cherry red with purple trim, is very fruity and aromatic. Velvety, balanced, well structured and round in the mouth and intense tannins. It is ideal for light meats, fish and seafood.

  • Alcohol: 12% vol.
  • Temperature: 16º.
Uva tinta Mencia

Mencía Grape

This is the red grape variety of northwestern Spain, especially in the O.D. Ribeira Sacra, Valdeorras and Bierzo.

It produces wines of exceptional quality, with an unmistakable bouquet and velvety texture. They are soft in the mouth, causing a pleasant sensation, its acidity is balanced, are potent in alcohol.

They are tasty and slightly astringent, with an elegant and fruitful aftertaste with hints of raspberry or blackberry and a prolonged persistence. The Mencia grape, maintains a relationship of similarity with other varieties such as Tempranillo or Cabernet Franc.

Pombares White Wine

Pombares white wine is obtained from the mixture of two types of grape, 85% and 15% godello Treixadura. Are two native Galicia noble varieties of high quality.

clean and bright. Lemon yellow with straw-colored tones. very fruity aroma, complex, mixed fruit predominance of peach and apple.

Palate: fruity, tasty and full-bodied. Aftertaste end, something sweet.

  • Alcohol: 11,50% vol.
  • Temperature: 8 to 10°.

Godello grape

Very aromatic and glycerine, a native of Galicia and essential designations of origin Valdeorras and Bierzo.

Its typical aromas are fruity, floral, herbaceous, with some aniseed and mint nuances.

The Godello grape, in addition to its extraordinary aromatic potential, has a strong character that produces lactic wines with a very broad palate.
